banana cinnamon rolls

a song for today these days: david bowie - heroes

banana cinnamon mini rolls

rolls:
¼ cup lukewarm water
¼ cup milk
1 tsp dry active yeast
2 tsp sugar
¼ tsp salt
1 ½ to 1 ¾ cup whole wheat flour
1 tbsp melted butter
½ cup mashed banana (1 – 1 ½ banana)

filling:
4 tbsp melted butter
4 tbsp sugar
1 tbsp cinnamon

mix water, milk, yeast and sugar in a small bowl until the yeast is spread evenly
mix flour and salt into it and when the dough comes together, then add banana and butter and knead it (i always do it by hand, for about ten minutes, but if you can as you wish)
cover the dough with a kitchen towel and leave in a warm place to rise for 1 – 1 ½ hrs, then knead it again and roll out onto a floured surface into rectangular shape
mix all filling ingredients together and spread evenly on the dough and roll it according to you wish (i prefer my rolls small so i roll it along the longer edge)
cut wish a sharp knife into 1-1,5 cm thick pieces
place them on a baking tray lined with baking paper
cover with a towel and let them rise for another hour
bake in an oven pre-heated to 180C for 20-25 minutes until golden brown
glaze with favourite icing
